I wrote in my cat post that I decided I had to make dinner tonight. We got a crockpot cookbook for our wedding and I found a recipe for Southwestern Chicken in it. I only decided to make it because there were less than ten ingredients, and most importantly, I didn't have to cook anything at all before I put it in the crockpot. I hate crockpot recipes where you have to brown the meat or stuff like that first. I want to use my crockpot so I don't have to do anything. Anyway, it turned out great. I thought it tasted really good, Josh thought it needed refried beans.
Southwestern Chicken
Makes six servings
Best fit for a 6 quart slow cooker
2 15 ounce cans of corn
1 15 ounce can of black beans
16 ounces chunky salsa
six chicken breast halves
Combine the corn, beans and 1/2c salsa in the bottom of the crockpot. Add the chicken and then cover with the remaining salsa. Cook on low for 7-8 hours.
I added tortilla chips and fat free sour cream. I'm not sure if I've mentioned it here before or not, but I hate chicken breast. I absolutely can't stand it. I have to make it so that I can barely tell I'm eating it.
Prep took me five minutes to put together and it was ready to eat when I got home. I love using the slow cooker.
