This Is What You Should Have For Dinner

Pan seared tuna steaks with asparagus. A-a-amazing.
I bought these from frozen, thawed them, used Bob's Red Mill Flaxseed Meal  mixed with Mrs. Dash Original as breading (because it is delicious and nutritious), put them in the pan, let them alone for five minutes, turned them over, and five minutes later turned them out on my plate. Wonderful and easy.

If you like your tuna prepared more rare, cook it for a shorter amount of time. This would probably be considered medium-well.

Incredibly easy, and filling. You should try it.

I am not a foodie, but I am aware that this may not technically be "seared". Get over it.

Crazy Animal Lady, At It Again

I realize that I am a crazy animal lady.

Yesterday, Joshua and I went to the lake just because. We found this little guy, even though he was trying to hide from us.
First, I thought it was a chipmunk.
Then I thought it was a rabbit. And then I determined it was a squirrel. Turns out it is a rabbit, but it's face looks very curiously like a squirrel. Interesting, no?

More Spring Flowers

I just love when spring comes and the flowers start to bloom. I was distracted yesterday while folding clothes (super easy to do), because I looked out the window and saw that these flowers had bloomed.
 

So I filled up my bottle with water and went out to get me some.

Relaxing Vacation

I kind of have a thing for birds. I've always enjoyed checking them out, and we have a perfect window for doing so. This afternoon I was in our bedroom reading and Josh yelled at me to come check out this bird outside.

I'm pretty proud of how these turned out.







This book belonged to my grandparents, and I recently got it from their house.


And that is how I'm spending my vacation.

Pasta with Roasted Broccoli

Quite possibly, my new favorite meal. 



Pasta with Roasted Broccoli with Garlic and Oil
4 servings
  • 8 oz high fiber or low carb pasta
  • 1 1/2 lbs broccoli florets
  • 6-8 cloves garlic, smashed
  • 2 tbsp extra virgin olive oil
  • kosher salt and fresh pepper
  • 1/4 cup fresh grated Pecorino Romano
Preheat oven to 450°. In a baking dish combine broccoli, olive oil, garlic, salt and pepper. Roast broccoli about 20 minutes, tossing half way, until broccoli is browned and tender.

Meanwhile, boil salted water in a large pot. Cook pasta according to package directions for al dente. Before draining, reserve 1 cup of the water from the pasta.  

Drain and toss pasta with broccoli. Add 1/2 cup reserved pasta water (or more if necessary), Pecorino Romano, salt and pepper to taste.

Paint-huffing husband hauled to jail

FORT WAYNE, Ind. (WANE) - A Fort Wayne man was charged with inhaling toxic vapors for the 48th time after his wife called police and told them he was huffing paint in their apartment last Thursday. According to a Fort Wayne Police Department report, when an officer arrived at the 517 Lawton Place apartment, Elizabeth Gibson said she and her husband Kelly had been in an argument and he had gone upstairs to huff paint.

The report said since she was afraid to go inside, she handed the officer her keys and followed him up. When the officer opened the door, the entire apartment smelled of paint fumes and Kelly was found sitting on the couch with his shirt off, and his hands, mouth, nose and chin covered in silver paint. Police said Kelly had a can of silver spray paint in his right hand and a paint-covered plastic bag in his left. The officer said Kelly had a dazed, glassy-eyed look about him and was unsteady on his feet. Kelly was taken to the Allen County Jail and charged with inhaling toxic vapors. This incident was the 48th time Kelly was charged with inhaling since 1992.

Give up on a book?

I usually never do. In fact, I've given up on four books in my whole reading life.

I am not one to force myself to read something I don't want to. If I'm not interested, I'm not interested.

Where To Hang?

We don't have a front hall closet in our house, in fact, the first closet is past the living room on the way to the bedrooms. What tends to happen is that Joshua and I use the dining room chairs for coat racks. (This is a very old picture, but it is our dining room table and chairs, before we started hanging coats on it. I may not have even been living in our house when I took this picture.) Anyway, it sucked because it seemed like the house could never really look clean and I didn't have anywhere to hang our jackets. It seems silly to put them completely away when we're going to wear them tomorrow.
Problem solved.
