Dinner!

Last night we were arguing over who was going to make a decision about dinner(every night!) Does anyone have that problem? We're always hungry at the same time, but can't ever decide what to eat. Josh suggested cutting up the raw chicken breast, marinating them in teriyaki and having teriyaki chicken strips. So that is what I did. I've never made it before, but it turned out surprisingly well!

This is the teriyaki sauce I used. I cut the chicken into strips, put it into a gallon zip top bag, and poured in teriyaki so that they were all covered. I use way more than I probably need, but want to make sure I really get it all. If I had thought ahead, I would have let it marinate all day, but since we were starving, I let it sit in the fridge for about ten to fifteen minutes, no big deal.

When I was ready to start cooking, I put bread crumbs on a plate, and pulled the strips out of the bag. I tossed them in the bread crumbs, a couple turns per side, and then put them into the skillet where I already had my olive oil hot and ready to go. I didn't deep fry these, I just put about an eighth of an inch of oil in the bottom of the pan and fried them like that. Three or four minutes per side, flip, and finish!

My first batch of finished strips. Josh thought the breading was a little heavy, so next time I won't do so much. This only took about 30 minutes total, and while the chicken was frying, I had fries baking in the oven. It was a quick and easy evening meal! You should try it, it's really good. :)

Suggestion: if you know you're going to make this instead of just throwing a meal together last minute, buy the chicken tenders that are in the same case with the chicken breasts. It would be much easier to not have to cut the breasts up...but in a last minute situation, it works.
