German Chocolate Cake

I'm a firm believer that everyone should have exactly what they want to eat on their birthday. That is the reason why we are having German Chocolate Cake today, even though no one in my family besides my dad likes it. His birthday was yesterday, and upon special request I just finished his cake. :) We're going out to lunch at noon today to celebrate. :)

Do You Stir-Fry?

Easy, Easy, Easy.

Have you heard of ARNOLD Sandwich Thins before? Click on that link to go to their web page to see the different varieties. I got these multi-grain ones from Wal-Mart. Hint: They are $2.50 at Wal-Mart, but at Sam's Club you can get 16 instead of 8 for $4. Just putting that out there. I got the smaller one though because I wasn't sure if we'd like them.


This is the easiest dinner I ever did make, and it was really good. The sandwich thins are actually pretty healthy...only 100 calories per bun and 5g fiber each. Check out our mini pizzas.

This is four thins/buns, or half of the package laid out open facing on the cookie sheet.
Add about a tablespoon and a half of pizza sauce.
Put your toppings on however you prefer. I can never remember if the cheese goes first or if the meat goes first.
Before baking. I put them in at 350° for about ten minutes.
And you have mini pizzas, and a dinner that was ready in around 20 minutes. You can't beat that.

Yes, we have cheddar cheese on our pizza. We got a hundred pound bag of cheese and I refuse to buy any other kinds while we have the enormous bag in our fridge. It doesn't taste any different.

Tuesday American History Lesson

You may know this, but you may not.

The word antebellum is from the Latin word ante meaning "before" and bellum meaning "war".

So if you hear someone talk about the Antebellum Age or just antebellum in general with America, they are talking about the period from when the United States was created until the American Civil War. So if you're into buying old houses, and you find one that is an Antebellum Home, it was built before 1861. And now you know.

Please Explain


Do you balance your checkbook? I don't. What I do is keep track of my purchases on my bank's website. I have been told twice in the past week that I have to learn how to balance my checkbook. One of those people was my mom. But she won't explain why I have to do it. I get a bad attitude when people tell me I have to do anything. I don't have to do my check book. I don't have to have a fountain in my wedding cake. I don't have to make my bridesmaids all match each other. I don't have to do anything except eat, bathe, and be sheltered. I have those covered.

So can someone please explain to me why I have to balance my checkbook?

World War I


Since no one except Sarah is going to guess at my extra credit question, I'll just spill the beans. Sarah you win. (By default). :)

Veteran's Day was originally called Armistice Day (which it still is in some other countries), because it was the day that the armistice to end the first World War was signed. It was considered "the end of the war to end all wars". Yeah, I had to say that one a few times before I understood it.

However, fighting stopped seven months before the armistice was signed. It was signed at the 11th hour of the 11th day of the 11th month of 1918, at Versailles, France. In the 1950's, Veteran's Day was expanded to include all veterans, not only those who served in WWI.

And now you know. Go impress all of your friends.

When it works...
I was reading Better Homes and Gardens last week and found out about Kirtsy.com. It is a site where the most interesting sites, blogs, articles are posted and ranked by popularity. That is how I've been finding new blogs to read.

The kirtsy start
It all began in the middle of the Super Bowl 2007. While Peyton Manning was scoring points, three chicks across the US had a conference call about an idea. You see, they were looking for an online spot where they could find a collection of content that was interesting to them. It didn't seem to exist, so they created it.

And kirtsy was born.


My only problem with it is that there have been a few times when I haven't been able to get on it. I don't know if their server is down or if it's my internet, but I can access other pages, just not that one. Try to see if you can get on it.

I'm posting this because it is the only duckface picture I can find of myself, and it is hideous. My best friend is a skank for taking this photo of me...and I deserve the humiliation for making it.

Megan, you're still a skank for that.

Tasty Tuesday!

I didn't mean for all of my posts to be about food, but too bad, eat it up.

These are my newly famous enchiladas. You are not going to believe how easy these are.
Chicken Enchiladas:
Ingredients:
1 8oz package cream cheese
1 8oz container sour cream
1 large jar salsa
4 chicken breasts
10-12 tortillas
1 package taco cheese

Season chicken breasts and grill.
Cut cream cheese into cubes.
Cut cooked chicken into bite sized cubes and add to cream cheese. Stir until melted and add 1/2 jar of salsa.
Soften tortillas in the microwave.
Add a heaping tsp of chicken mix to tortilla and roll up. Please seam side down in a 9x13 pan.
Mix sour cream and salsa remaining.
Spread over top. Cover with cheese and bake at 350° until golden brown.

THAT IS ALL! If you want to make it even easier than that, don't use chicken. The ones in this picture are cheese enchiladas, and they are really good too.



Yummy Fro-Yo

I love frozen yogurt, and its such an added bonus that it's not as bad as ice cream. I tried this a few weeks ago, and it's really good. If you like fro yo, you should check it out. I think it tastes just like ice cream. You can find it in your grocers freezer aisle.

Megan's Birthday

Megan was super busy the weekend of her birthday, and I was scheduled to work the whole weekend, so we planned to have a lunch for her the next Sunday. It was so good. I totally forgot to take pictures of the enchiladas (but don't worry. Josh wanted them again like the next day so I took pictures of those).

Here is her cake. Strawberry with white icing.

Burritos!

On Sunday we couldn't decide what we were going to have. Our no fail cuisine: Mexican. Every. Single. Time.

It was actually going to be a black bean soup, but that takes like ten hours, so we fell back on burritos. And they were wonderful.

We got this awesome rice cooker for a wedding gift (this is the second time we've used it...) and it really rocks. We also got a hundred pound bag of rice from Sam's Club, so we need to be getting the rice cooker out more often.



We just used the white rice because its what we had. We actually have Mexican rice in the cabinet that I was going to make for Megan's birthday lunch, but I would much rather let the rice cooker do the work, so we had white rice. You couldn't even tell though. These are veggie burritos...the only real reason being that beans are much cheaper than meat, and it sounded good. Inside are: black beans, white rice, shredded cheese, avocado, and salsa. They are VERY filling. And VERY good. You should try to make your own, its so easy.

We're High Fashion

I was reading Better Homes and Gardens last week, and I learned that brown is the new "it" color for living rooms. We've been "it" for a whole year now. Yes, a whole year...we got our house last November, and it is amazing that time has flown this quickly.

So...I can't find the picture on the BHG website, so you get the crappy picture of a picture. Here is the picture I found:

What the World Eats

Josh and I were talking about how we feel that nutrition should be a part of all curriculum in schools, at least as a serious subject in health. He brought up this article he saw a while ago and I thought it was really interesting. In Bhutan, they spend around $5 on food per week, and feed all of those people.
In Chad, they live on $1 per week.
In Ecuador, $31 per week.
Look at all of those people this feeds!
I could so be Italian, look at all that bread!
And the United States. Yum, pizza and chips. You've gotta love America.
