On Sunday we couldn't decide what we were going to have. Our no fail cuisine: Mexican. Every. Single. Time.

It was actually going to be a black bean soup, but that takes like ten hours, so we fell back on burritos. And they were wonderful.

We got this awesome rice cooker for a wedding gift (this is the second time we've used it...) and it really rocks. We also got a hundred pound bag of rice from Sam's Club, so we need to be getting the rice cooker out more often.

We just used the white rice because its what we had. We actually have Mexican rice in the cabinet that I was going to make for Megan's birthday lunch, but I would much rather let the rice cooker do the work, so we had white rice. You couldn't even tell though. These are veggie burritos...the only real reason being that beans are much cheaper than meat, and it sounded good. Inside are: black beans, white rice, shredded cheese, avocado, and salsa. They are VERY filling. And VERY good. You should try to make your own, its so easy.
