Sweet Potato Fries

I've made these once before, but they didn't turn out quite so well. I didn't leave them in the oven long enough because I was totally impatient, and they came out soft. I don't know about you, but I love a crunchy fry. I didn't have anything to do today so I was determined to leave these in the oven as long as it took.

First I cut up my potatoes.

I had four medium sized sweet potatoes, and they really add up.

I probably only used two, if that. I saved the rest for fries at a later time (probably tonight). I arranged them on Joshua's beef jerky baking rack (that I have made my own), and then got them seasoned.

The last time I did this I put them in a bowl and tossed them with oil. This time I decided I didn't want to get my hands all disgusting, so I put the olive oil in the bag, with salt, pepper, and cinnamon. I considered adding sugar, but didn't.

I shook them until they were well coated.

And put them back onto the rack. The extra oil dripped through the grate, helping to keep them from staying soggy by laying in the oil.

I let these go for an hour. I'm so serious. I cranked the oven to 400° and just kept checking about every 20 minutes. The thicker cuts were still soft, but the thinner ones had a very nice crunch to them.



Yes, I ate all of those by myself. I justified by knowing that its a healthy vegetable, and I didn't put anything on them except the olive oil, salt, pepper, and cinnamon. Much better than a whole plate of french fries, right?
Joshua isn't a big fan of sweet potato fries, and he didn't like these much either. I really love them though. You should try them out.

  2. I think next time I'll put the oven on 450° to see if they crisp up more. Good luck!
